Neighborhood restaurant offers classically prepared meals

Restaurant Sabor is Chef Domacassé's first restaurant business enterprise. Domacassé, who learned a passion for food as a child in Puerto Rico from his mother, is classically trained in French cuisine. He has worked with some of Baltimore's most established chefs at Linwoods, Brasserie Tatin, Rudy's 2900, and Gertrude's. Most recently, he assisted in the opening of Victoria Gastro Pub in Columbia before deciding to take on his own venture in the restaurant industry.
"After spending years apprenticing and working side-by-side with the best in the culinary industry, I am excited to take what I've learned and be able to share my talents by creating a menu that really shows who I am and where I came from," said Chef Domacassé.
Influenced by his upbringing and using his ethnic background and previous work experience as inspiration, Domacassé has created a menu of American classics that incorporate French and Puerto Rican influences. The dinner menu, which will change seasonally and features daily specials, features entrees including: Braised Short Ribs with a parsnip puree, vegetables and a chimichurri garnish; Mojo Brushed Grilled Salmon with buttery spaghetti squash noodles and a sweet potato beignet; and Duck Confit with red wine braised lentils and plantain dumplings.
Salads and appetizers include El Sabor, mesclun mix, European cucumber, queso blanco, tossed in a roasted apple balsamic vinaigrette, and served with plantain crisps; Beet & Goat Cheese Salad, slow roasted beets sliced carpaccio style with drizzled Jerez vinaigrette, melted goat cheese, and pistachio crumbles; Pork "Pansita" with red wine braised cabbage and plantain coins; and Escargot Vol Au Vent, delicate puff pastry stuffed with garlic butter and escargot.
Restaurant Sabor's lunch and brunch menus include a Grilled Beef Burger served with papitas fritas; a Grilled Chicken & Brie Sandwich with roasted wild mushrooms on Ciabtta; and a Quiche and Omelette du Jour. Additional items found on the brunch menu include Challah French Toast with seasonal toppings; Eggs Benedictinos, toasted English muffin with Canadian bacon, and Hollandaise and served with house home fries; and Vanilla Buttermilk Pancakes with a choice of chocolate chips, nuts, bananas and berries.
In addition to incorporating French and Puerto Rican flavors into his creations, Chef Domacassé has added a few family recipes to the menu including a secret family recipe for flan and Bubsy's Orange Cake, compliments of the grandmother of his wife, Anne Marie Domacassé.
"With my wife, mother-in-law and son by my side, and with the kitchen staff who I've worked with for the past six years, this truly is a family endeavor," said Chef Domacassé. "We are all so excited to open the doors of our new home to the community."
The 2,640 square-foot restaurant features dark, distressed wood tables, over-sized chairs, and plush banquettes. Additionally, a large community table allows for guests to dine together. Rita St. Clair Associates designed the warm and elegant interior with Arts & Crafts décor and a semi-open kitchen. Total seating capacity accommodates 80 and, in the warmer months, they hope to also be able to offer outdoor seating.
Restaurant Sabor is located in the Roundwood Center at 12240 Tullamore Road in Lutherville, Baltimore County, alongside the Graul's Market. Lunch is available Wednesday through Friday from 11 a.m. to 2:30 p.m. and brunch is available Saturday and Sunday from 10 a.m. to 2:30 p.m. The restaurant offers early dining specials for dinner from 4:30 p.m. to 6 p.m. Monday through Friday. Dinner is available until 10:30 p.m. Monday through Friday and until 11 p.m. Saturday and Sunday. The restaurant is currently BYOB with a five-dollar service charge per table.
