B&O American Brasserie new Spring menu makes your mouth sing

Chef E. Michael Reidt and Head Bartender Brendan Dorr of B&O American Brasserie have introduced new additions to the menus for the spring.

I headed down for a tasting* with fellow media to sample some of the new menu items from both the kitchen and the bar.
If you never been when you walk in you are welcomed with contemporary design elements playing off a backdrop of the time-honored architectural features of the original Beaux Arts architecture of the former B&O Railroad headquarters. The feeling is very sophisticated but not pretentious.

The bar menu offers some great new spring inspired drinks such as:
  • Modena Market Cocktail, Grey Goose Vodka, White Balsamic Syrup, Fresh Lime Juice, Strawberry and Basil Garnish ($12)
  • Chamomile Fizz, Chamomile infused Grey Goose Vodka mixed with Domaine Canton, Lemon-Honey Syrup, Lemon Juice, Egg and Soda Water ($12)
  • The Remedy, Ketel One Vodka, Chartreuse, Orange Flower Water, Ginger Syrup and Freshly Squeezed Orange Juice ($10)
  • Not new but worth trying is the House made Cola- it doesn’t taste like your normal Pepsi, Coke or even Mexican Coke- it has sweetness mixed with a ginger bite.

If you are looking for new and unique starters try one of these out:
  • The “Green” Crunch with Asparagus, Snow Peas, Green Beans, Peas, Chipotle Goat Cheese, Smoked Almonds and a Ginger-Chive Dressing ($11)- not only does the presentation make it appealing so does the crunch of the fresh veggies plus the smoked almonds add a nice twist to the freshness
  • Smoked Pork Belly with Banana-Lentil Salad, Crispy Pig Ear and Chili-Caramel ($11)- the mix of the smokiness and banana are a perfect combination to this savory starter

If you are in the mood for flatbread try out on of these spring delights:
  • Market Fresh flatbread for spring is topped with Red Bliss Potato, Smoked Ricotta, Farmers’ Egg and Baby Arugula ($9)- this is what a Farmer’s Market would taste like- fresh, earthy and delicious
  • Smoked Shrimp flatbread topped with Fava Beans, Asparagus, Red Onion and Parmesan ($12)- the texture combination is perfect and he saltness was defused by the beans and onion
  • The new spring menu also offers new skillet items such as the “Kentucky Fried” Sweetbreads with Golden Raisins, Smoked Bacon and Capers ($10)- I am normally not a sweetbread person but will admit I did like these

*Note that this tasting was a complementary media event to share new menu items, however, all thoughts and opinions are my own.

Baltimore Soft Shell Crab Week: delicacy of the Chesapeake- where to find them and how to cook them

The shedding cycle of the Chesapeake Bay blue crab runs from late May through September and produces the delicious soft shell crab. • 700 grille- For lunch Beer-battered soft-shell crab sandwich on a Kaiser with old bay dusted fries ($13.50) or Old Bay flour dusted soft-shell crab over Arugula and blistered tomato salad lemon basil vinaigrette ($13.50). Don't just drive by because Koco’s Pub is a hot spot for crab cakes

Koco’s Pub is one of those places you drive by time after time but glance at it as you drive by but never go in. This family owned and operated quaint parrot-filled bar and restaurant is more than meets the eye.

When trying to describe the décor and atmosphere some people may lean toward “dive bar” or a neighborhood joint that reminds you of a island watering hole out of a Jimmy Buffet song. When you walk in you find a long bar, pool tables and a tropical feel from the parrot décor in this neighborhood hang out.

Now the food brings on a whole new meaning to this establishment. The main menu item that this place is well known for is the crab cakes. Kocos's crab cake is made fresh daily by hand from jumbo lump meat and a family recipe secret that is only shared with the owners, John and Joanna Kocovinos, and their daughter Marcella Knight.

The golden brown crab cake is moist (not overly moist) and barely had any filling of any sort (just enough to hold it together) - it’s all meat! The size of this crab cake is as big as a fist if not bigger. The seasoning is perfect and not overpowering.

A night at the Mason Dixon Master Chef Tournament- Baltimore's own Iron Chef America

The Mason Dixon Master Chef Tournament has kicked off wowing taste buds! The first 2 sets of Chefs have competed and the competition continues!

If you have heard, the Mason Dixon Master Chef Tournament is 32 local teams, each consisting of an executive chef and a sous chef, will be cooking competitively. The multi-week event is being held in high style in the Grand Ballroom of the historic Belvedere. Starting on Monday, May 10 for two evenings per week for 16 weeks. Each evening’s event begins with a happy hour at 5 p.m. and dinner served at 6:30 p.m., followed by the competition at 8 p.m. and judging beginning at 9 p.m. A panel of judges, including industry experts, local celebrities, and audience members will determine the winning teams- and guess what I am one of those judges!

Guests attending this exciting event will be more than just onlookers. In addition to enjoying their choice of a gourmet four-course meal, guests will also get to witness two spectacular area chefs battle it out in the prep kitchen right on the main dining room floor.

As an added bonus, audience members will participate each night of the competition as judges, tasting the chefs' creations and voting right alongside of our expert judging panel. Finally, and best of all, guests will be supporting a local charity since 10% of the net proceeds from ticket sales will go directly to Moveable Feast. Moveable Feast is a local non-profit Baltimore charity that provides meal delivery service to homebound People Living with AIDS/HIV, women undergoing breast cancer treatment as well as their families.

My first night- May 11th, 2010
My first judging night was spectacular! The food was mouth watering and the atmosphere had the excitement of the tournament and the fun of a social gathering.

The Evening started out with the 4-course meal prepared by Truffles catering (each week the 4-course meal is different):
  • First Course-Spring Salad with poached pear with red and green oak lettuce, assorted berries,
  • red pepper, pine nut dust and raspberry vinaigrette. This dish had a great presentation and was a perfect opener for the evening and spring.
  • Second Course- Sorbet- this was a nice refreshing pallet cleanser
  • Third Course (Select One Entree when Purchasing Tickets)-Chicken Neptune - seared breast of chicken with scallop, shrimp, jumbo lump crab and sherry cream. I had this one and was very pleased with the combination of flavors that mixed very well together. The shrimp, chicken and scallop was cooked perfectly and the sherry cream had a full but no over powering flavor. Beef Entrée- oven roasted beef filet with blueberry merlot demi-glase. Vegetarian Entrée- grilled portabella mushroom with zesty garden ratatouille and three cheese fondue
  • Fourth Course- Dessert Trio - Mini Creme Brule, Chocolate Truffle, and Fruit Dessert Soup

And the cook off begins… Click here to read more and see what the Chefs prepared.
