Party in the Park is bringing you local food and fun

Party in the Park is coming and is the perfect way to spend the day enjoying music, local FOOD, games, crafts, art and much more!

Party in the Park is raising money for The Nikki Perlow Foundation which was formed to celebrate the life of a beautiful young woman-Nikki Perlow - the 21 year old daughter of Cliff and Amy and sister to Josh. Nikki grew up in a loving family, loved animals-especially horses, had a passion for all things fashion and enjoyed sailing, lacrosse, basketball and softball. She started experimenting with drugs as a teen and it soon turned into a battle to save her life. With support from her family, Nikki struggled to maintain sobriety-entering four-thirty-day programs and a twelve-month program. She was sober for 15 months and her family thought she had won the battle with this insidious disease.

On July 9, 2007, one month shy of her 22nd birthday, Nikki died of an accidental overdose. Her parents, brother, family and friends have joined forces to honor her memory by forming this foundation that aids young adults struggling with the disease of addiction. The foundation offers financial, logistical and emotional support to those young adults, like Nikki.

Project Food Blog Challenge #2: The mainstay of the Maya


At first I was unsure where to begin for Challenge 2 of Project Food Blog. Having to pick an ethnic classic that is outside of my comfort zone or that I am not as familiar with had me stumped. Then I started to run through my memories of different places I have been, and that’s when an idea sparked for what I could cook.

I feel that food is one of the great things to awaken our senses and help us enjoy life with our friends and family.  Traveling allows me to do just that and explore different types of food that I have never experienced before.  I spent my honeymoon in Mexico and had the opportunity to go back to same location two years later to be in a wedding.

During both trips, I was able to experience cuisine of the Yucatán region.  The food of this region has its own unique style and is very different from what most people would consider "Mexican" cuisine. Yucatán food has influences from the local Mayan culture, as well as Caribbean, Mexican, French, and Middle Eastern cultures.

One of the best dishes I had in this region is Sopa de Lima. This traditional chicken soup is a mainstay of the Maya. It is made with shredded chicken, bits of fried tortilla, and lime juice, which makes it perfect for the change of the season and very good for you if you aren't feeling well. Mayan traditional healers used limes for the antibiotic effects, as well as antioxidant properties, which is helpful to stop cell division in many cancer cell lines. Besides these added benefits, the soup is delicious!

Experimenting with food and cuisine you are unfamiliar with can be nerve wracking and scary; however, this recipe is easy to make even for the most novice chef.  All the ingredients you use are common and easy to find at most grocery stores.  The trickiest part is timing the frying of the tortillas.  Making this soup brought back a flood of memories from my travels to Mexico, so it was a great dish to share with my husband and reminisce. 

Here is the recipe I used:


Sopa de Lima

The aromatic herbs plus the sourness and acidity of the lime create a soup full of zing and comfort.

Preparation and cooking time: 1 hour and half
Servings: 6

Ingredients:



Fresh is the best
  • 8 cups chicken stock
  • 1 whole Chicken cut into pieces or 2 big Chicken Breasts
  • 2 bunches of oregano
  • 5 whole cloves
  • 1 onion chopped into 4 pieces
  • 1/2 medium onion chopped
  • Salt and pepper to taste
  • 2 tablespoons of corn oil
  • 2 medium peeled tomatoes (big chunks)
  • 1 chopped sweet pepper
  • 2 fresh limes
  • 4 to 6 slices of lime, for garnish
  • 1/2 bunch fresh cilantro sprigs
  • 1 tablespoon chili powder
  • 1 tablespoon ground cinnamon
  • 8 ounces shredded Monterey Jack cheese
  • 2 avocados, peeled and cut into 1/2-inch dice
  • 1/4 cup chopped fresh cilantro
  • Sour Cream

Directions:
  • Heat oven or toaster-oven to 400°. Place cloves on baking sheet and roast for a couple minutes, making sure not to burn them.
  • Place chicken stock, oregano, garlic, quartered onion, lime juice of 2 limes, half of a lime already squeezed, salt, pepper, chili powder, cloves and cinnamon in a large sauce pan and bring to a boil, cooking until chicken is cooked through.
You can adjust the amount of lime juice
  • Cut tortillas into wedges, spread in a single layer on baking sheet and place them in a 200° oven for about 20 minutes.
  • Cut tortilla wedges into strips and fry in hot corn oil until hardened but not brown and crispy- drain on paper towel and lightly salt.
  • Sauteé sweet pepper, tomato and diced onion in 2 tablespoons of corn oil until tender.
Add color
  • Strain the broth through fine-meshed strainer into a clean pan and return to a simmer.
  • Separate chicken, shred it, and then return it to the broth.
  • Add sautéed mixture of sweet pepper, tomato and diced onion to the broth, and simmer for 5 to 10 minutes.
  • Place a mound of tortilla slices and cheese in individual bowls, and ladle soup on top.
  • Garnish with more tortilla slices and cheese plus sour cream, cilantro, avocado and a lime slice.
Enjoy!

Helpful Hints:



  • You can use store bought stock/broth or create your own.
  • To add heat to the soup you can add jalapenos to the pot when you first start sautéing or add hot sauce as a garnish.
  • You can substitute the chicken for turkey.
  • Save some time by using a fully cooked rotisserie chicken.
  • Add corn kernels
  • Prepare soup the night before and the garnishes right before you want to serve for an easy dish for entertaining!

Food not only awakens our senses, but it allows our minds to wonder and paint a picture of places we have been or want to go.  Whether you are dining at your favorite ethnic restaurant or hosting a themed party, world cuisine can take you anywhere you want! People all over the world eat, so I encourage my readers to never be afraid to try something new- someone somewhere eats it!

Time to cook

Thank you to everyone who voted for me for round 1 of Project Food Blog!  I was one of the 400 people selected to continue to round 2 and tackle a classic dish from another culture.   This ethnic classic is to be outside your comfort zone or are not as familiar with- and this is were I couldn't make up my mind.

When I cook I tend to cook a variety of Asian, European and Italian dishes.  We were encouraged to stay away from the French and Italian dishes.  After some thought and pondering I narrowed it down to either a South African dish or a dish from the Yucatan.

Why these places?  Well we are to include how you arrived at this decision so what other way to incorporate my travels and memories into it. So this morning will consists of me cooking away in out tiny kitchen and making the Husband do his magic with the camera as I work!

I was invited down to taste some of the new items on Bar Bites menu. We tried the Mini Crab Cake BLT's with mini Crab Cakes, served on mini burger buns with mustard mayonnaise and topped with lettuce, tomato and crispy bacon. This is a nice spin on a traditional Baltimore style crab cake.
We also sampled the Smoked Salmon Pizza with smoked salmon with capers and purple onion on a warm crust with dill and sour cream. I fell in love with this gourmet pizza.
Now if you’re in the mood for dinner Morton’s The Steakhouse has added some new additions to its menu:
  • Double Cut Filet served with a side of Béarnaise sauce
  • Bone-In Filet served with a side of Béarnaise sauce
  • Chilean Sea Bass with Pineapple-Pepper Salsa is broiled and served topped with the Pineapple-Pepper Salsa
  • Onion Rings served with Thai Cream Sauce and ketchup on the side
  • Morton’s Legendary Sundae with Morton’s Hot Chocolate Cake served with 3 scoops of Haagen Daz Vanilla ice cream then topped with caramel and fresh whipped cream
I sampled the Chilean Sea Bass with Pineapple-Pepper Salsa and was pleased with the fresh taste and combination of flavors. The Onion Rings made my mouth sing with the Thai Cream Sauce! So the next time I need to escape for small amount of cash I am pulling up a bar stool and enjoying some Smoked Salmon Pizza, Onion Rings and Power Hour Mojito- care to join me?
