FREE ice cream event to benefit the Make-A-Wish Foundation
Kate is 11 and got to be a Jr Tastemaker and developed this year's Make-A-Wish creation. Kate's one wish was to create the creation for the "World's largest ice cream social". Kate's creation features caramel Apple ice cream, mixed with chocolate shavings and graham cracker pie crust and apple pie filling.

Party in the Park is bringing you local food and fun
Party in the Park is coming and is the perfect way to spend the day enjoying music, local FOOD, games, crafts, art and much more!
Party in the Park is raising money for The Nikki Perlow Foundation which was formed to celebrate the life of a beautiful young woman-Nikki Perlow - the 21 year old daughter of Cliff and Amy and sister to Josh. Nikki grew up in a loving family, loved animals-especially horses, had a passion for all things fashion and enjoyed sailing, lacrosse, basketball and softball. She started experimenting with drugs as a teen and it soon turned into a battle to save her life. With support from her family, Nikki struggled to maintain sobriety-entering four-thirty-day programs and a twelve-month program. She was sober for 15 months and her family thought she had won the battle with this insidious disease.
On July 9, 2007, one month shy of her 22nd birthday, Nikki died of an accidental overdose. Her parents, brother, family and friends have joined forces to honor her memory by forming this foundation that aids young adults struggling with the disease of addiction. The foundation offers financial, logistical and emotional support to those young adults, like Nikki.

Project Food Blog Challenge #2: The mainstay of the Maya

| Fresh is the best |
- 8 cups chicken stock
- 1 whole Chicken cut into pieces or 2 big Chicken Breasts
- 2 bunches of oregano
- 5 whole cloves
- 1 onion chopped into 4 pieces
- 1/2 medium onion chopped
- Salt and pepper to taste
- 2 tablespoons of corn oil
- 2 medium peeled tomatoes (big chunks)
- 1 chopped sweet pepper
- 2 fresh limes
- 4 to 6 slices of lime, for garnish
- 1/2 bunch fresh cilantro sprigs
- 1 tablespoon chili powder
- 1 tablespoon ground cinnamon
- 8 ounces shredded Monterey Jack cheese
- 2 avocados, peeled and cut into 1/2-inch dice
- 1/4 cup chopped fresh cilantro
- Sour Cream
- Heat oven or toaster-oven to 400°. Place cloves on baking sheet and roast for a couple minutes, making sure not to burn them.
- Place chicken stock, oregano, garlic, quartered onion, lime juice of 2 limes, half of a lime already squeezed, salt, pepper, chili powder, cloves and cinnamon in a large sauce pan and bring to a boil, cooking until chicken is cooked through.

- Cut tortillas into wedges, spread in a single layer on baking sheet and place them in a 200° oven for about 20 minutes.
- Cut tortilla wedges into strips and fry in hot corn oil until hardened but not brown and crispy- drain on paper towel and lightly salt.
- Sauteé sweet pepper, tomato and diced onion in 2 tablespoons of corn oil until tender.

- Strain the broth through fine-meshed strainer into a clean pan and return to a simmer.
- Separate chicken, shred it, and then return it to the broth.
- Add sautéed mixture of sweet pepper, tomato and diced onion to the broth, and simmer for 5 to 10 minutes.
- Place a mound of tortilla slices and cheese in individual bowls, and ladle soup on top.
- Garnish with more tortilla slices and cheese plus sour cream, cilantro, avocado and a lime slice.

Helpful Hints:
- You can use store bought stock/broth or create your own.
- To add heat to the soup you can add jalapenos to the pot when you first start sautéing or add hot sauce as a garnish.
- You can substitute the chicken for turkey.
- Save some time by using a fully cooked rotisserie chicken.
- Add corn kernels
- Prepare soup the night before and the garnishes right before you want to serve for an easy dish for entertaining!
Food not only awakens our senses, but it allows our minds to wonder and paint a picture of places we have been or want to go. Whether you are dining at your favorite ethnic restaurant or hosting a themed party, world cuisine can take you anywhere you want! People all over the world eat, so I encourage my readers to never be afraid to try something new- someone somewhere eats it!

Time to cook
When I cook I tend to cook a variety of Asian, European and Italian dishes. We were encouraged to stay away from the French and Italian dishes. After some thought and pondering I narrowed it down to either a South African dish or a dish from the Yucatan.
