Restaurant trends for 2011 part 2

With the start of a New Year under our belts, restaurants start to explore their options for new menu items for 2011. In 2010 some of the restaurant trends consisted of Artisan pizza, small plates, cocktails, sustainability and communal tables.

So what are some of the predictions for menu trends in 2011? Part 1 has been published the other week, but there are more!

Here are some more of them according to National Restaurant Association
  • Smaller portions for smaller prices
  • “Culinary” cocktails - ones that have savory or fresh ingredients
  • Ethnic-inspired breakfast items
  • Artisan cheeses
  • Mobile food trucks and pop-up restaurants

Fun and inventive sushi at the Kona Grill

As you enter Kona Grill you are greeted with an exciting atmosphere with the two large glass-walled aquariums containing a mix of colorful tropical fish, dark colors with retro accents and the patio with fire pit.

The menu offers Japanese and New American cuisine, fresh sushi and specialty entrées with international flavors. There are even gluten free options.

According to Kona they pride their selves on offering guests with fresh ingredients and entrees made from scratch, fresh fish flown in daily, knowledgeable, approachable service and casually-sophisticated environment.

As we pondered over the menu as what sushi and sashimi to try, we thought the Kona Calamari would be a perfect start. The calamari is nicely cooked and not tough or chewy and the spicy aioli dipping sauce, which it is served with, adds a nice flavor contrast. Don’t forget the traditional Edamame that is lightly tossed with kosher salt.

If you are tuna lover the Ahi Wonton Crisps with crispy wontons topped with rare sesame-seared tune and then drizzled with a wasabi aioli. Watch out because that aioli has a nice kick to it.

In the mood for some sushi, then check out the Kona Roll like the Sunshine Roll with spicy salmon roll, topped with fresh salmon and thinly sliced lemon. The citrus adds a nice bite to the flavor combination. My dining partner and I both agreed this would become a staple each timer we visit.

Another delish dish was the Tuna Carpaccio with thinly sliced sashimi topped with wasabi mayo, and yuzu ponzu served with fresh arugula. Ponzusauce is heavily used in Japanese cuisine with foods like sashimi, tempura, plus rice and has a distinctive sweet, sour, slightly salty flavor. The tuna it self was fresh and sliced to perfection.

The service was friendly and attentive. The atmosphere was fun and inviting. If you are looking for a quiet meal, this place isn’t for you. However, if you want a little excitement and high energy, and enclosed patio with a fire, this is the place for you.

Two special events coming up that need your help


I have two special events coming up that need your help:
·      I have a friend who her family is hosting Casey’s Histiocytosis Basket Bingo to support the Histiocytosis Association of America.  Casey is my friend’s son who was diagnosed with Langerhans Cell Histiocytosis and is currently undergoing treatment at Johns Hopkins Hospital. The bingo is being held on his 10th birthday and instead of having a birthday party like most kids he wants to raise awareness and funds for the HAA.   They are looking for donations gift certificates, products or services * Tax deductable) to fill the baskets with to help make a difference! HAA is the only nonprofit organization dedicated to providing support and education to patients and families likes ours that are dealing with histiocytic disorders in the United States. The HAA also provides funding for numerous research grants in hopes of finding better treatment option and a cure for this rare blood disease. ·      I am working with Cirque du Soleil and giving away tickets to the new show TOTEM that is coming to Baltimore this Spring.  They would like find a restaurant to partner with the give away to create a “Night Out on the Town” prize which would include the tickets to the show and maybe a dinner/ gift card to a restaurant.

Want to learn to cook like a pro? Then the Baltimore International College is the places for you with the new spring semester Food Enthusiast Classes.

Baltimore International College (BIC) is again offering a full array of non-credit, continuing education cooking and baking classes and demonstrations taught in the evenings by experienced BIC chef instructors at the Culinary Arts Center. These classes will begin in February and go through the spring, and cover an extremely wide variety of topics on food, wine and dessert.

BIC is offering classes for all levels of amateur cooks and food enthusiasts, from cooking demonstrations, holiday demonstrations, to baking classes and hands-on learning classes for varied ethnic cooking.

These classes are perfect for the busy adult because they are offered in the evening and each class is only meets once, allowing you the flexibility to pick which classes fit into your schedule. Some of the interesting classes include Food and Beer Pairing, Chesapeake Bay/Game Cooking, and Valentine’s Day Dinner For Two/Aphrodisiac Foods.

Time to get your "roll" on- sushi class

RA Sushi has brought back its Sushi 101 class. This January, RA Sushi in Baltimore is rolling out another Sushi 101 class to let the locals in on a variety of sushi-making secrets. I had the chance to go to the first cooking class and had a blast!

The class will include a brief history of sushi and a sushi-rolling lesson, as well as a non-alcoholic beverage, miso soup, edamame, two maki (rolls), two pieces of nigiri, a sushi-rolling mat to take home and a complimentary lunch card for next-visit use.

Bring the great restaurant into your home

Right before the hussle and bussle of Christmas week I was able to join some local “foodies” and City Peek Patti for an elegant wine dinner in the home of Chef Calle and Mary Vahl of Chef Calle's Baltimore Distinctive In Home Dining. This experience brought a new level to a CHEF’s table since we were in the Chef’s home enjoying this high end restaurant worthy dinner.
