Fleming’s introduces Steakhouse Cobb Salads

Never content to rest on their culinary laurels, Fleming’s Prime Steakhouse & Wine Bar has introduced two new entrée salads, while reinventing the classic shrimp cocktail and lightening and brightening their scallop offering.

After months of research, experimentation, numerous tasting sessions, and dozens of recipe refinements, Executive Chef Russell Skall and his team have perfected the new Steakhouse Cobb Salad entréeand Seared New Bedford Scallops entrée, and Shrimp Cocktail appetizer. Fleming’s Steakhouse Cobb has ditched the classic chicken and offers guests the choice of sweet, succulent Maine lobster or tender filet mignon. Both salads, presented and tossed tableside, include freshly chopped romaine, blue cheese, crisp bacon, tomato, and avocado; the additions of fresh sliced white mushrooms and asparagus elevate Fleming’s interpretation of the popular salad. The Steakhouse Lobster Cobb is tossed with tarragon ranch dressing; the sliced Filet Mignon version is paired with a signature red onion balsamic dressing.

SearedNew Bedford Scallops, with four to five large scallops in the entrée, showcases the delicate flavor and texture of the shellfish, with an emphasis on the fresh, clean taste of the sea. Lightly seasoned with a spice blend to enhance their flavor, the scallops are quickly seared, locking in the sweet juices, and then finished with a simple Meyer lemon oil-honey glaze. The fresh, light theme is carried out in an edible garish of shaved young vegetables of green beans, asparagus and baby carrots in lemon balsamic dressing. The tender scallops, paired with a crisp white wine, make for a perfect summer selection.

Fleming’s Shrimp Cocktail has been recreated with drama and luxe in mind. Three colossal fresh shrimp are presented on a bed of crushed ice. The appetizer is served tableside, with the signature tomato horseradish sauce in a silver shaker. A shot of Gray Goose vodka is added and shaken vigorously.
“We found the vodka notes actually mellows out the assertive flavor of the horseradish,” Chef Russell Skall noted. “It’s a fun, contemporary play on a classic.”

The Lemmo Twins Are HERE!

Just wanted to let you know why the blog will be far and few in between with postings for a little while...

Well we are proud to announce that the Lemmo Twins are here (a tad early- 5/21/11 at 34 weeks). I woke up to use the restroom at 5:30 Saturday morning and when I was leaving the bathroom my water broke. I had no contractions or pain. We got to the hospital by 6 and as they were taking my vitals and checking me they discover that Baby A who was breech had his feet coming down the delivery canal - so the SWAT team of Labor/Delivery kicked in and off for a c section I went. They had to completely knock me out because there was no time for any other forms of pain blocker to kick in. Andy got to be in the room while they were born - both boys were out of me by 6:30 - so I think I had the easiest, quickest and painless delivery in the world.

Both boys are in the NICU and were under heat for part of the day. Baby B had oxygen for a while but is off it. Both boys were taken out of heat and placed in cribs. However Baby B had to go back under heat and will be there all night. Overall both are doing good.

I only got to hold Baby A and see them real quick after the surgery - which I don't recall really because of all the meds. I am looking forward to going to the NICU this morning to see them since they unplugged me from everything and was able to get out of bed around 4 am this morning.

I am here till Wednesday and we are not sure if they will get to go home with us on Wednesday or not

We will announce the names and give weights, size, etc later today.

Check out the crab cake special at Padonia Station

Padonia Station is host to a sports-bar atmosphere encouraging the sports fan within you as you dine on some of your favorites like wings, sliders, cheese steaks and more. If you happen to go in on a Friday or Saturday night you can enjoy live local bands.

The menu is large and seems to never end but has options that could satisfy anyone’s craving. A nice starter was the Supreme Nachos with crisp tri-colored tortilla chips, diced jalapenos, spring onions, black olives, tomatoes, and shredded lettuce topped with melted Monterey Jack and Cheddar cheese sauce; served with a side of salsa and sour cream ($6.99). You can even add chili or grilled chicken for $3.00. We elected to add the chili, which had a decent amount of heat and blended nicely with the melted cheese and other toppings. The size of the nachos was ample and would even make a nice meal for just one person.

Flavors:
  • Chocolate Lovers Triple Chocolate Cake - chocolate ice cream with fudge cake chunks and chocolate frosting swirl
  • Strawberries are Forever Shortcake - strawberry ice cream with strawberry pieces, pound cake chunks and a whipped cream frosting swirl
  • I Do I Do Wedding Cake - buttercream frosting-flavored ice cream with white cake chunks and a raspberry sauce swirl
  • Red Carpet Red Velvet - red velvet-flavored ice cream mixed with cream cheese frosting flavored ice cream and red velvet cake chunks

National Burger Month: Morton’s Two-Fisted Bacon Cheeseburger recipe

In honor of National Burger Month here is a recipe for Morton’s the Steakhouse Two-Fisted Bacon Cheeseburger, which is in the “Morton’s The Cookbook.” It’s also Matt Birk’s favorite (Matt as you may already know is the All-Pro Center of the Baltimore Ravens).

MORTON'S TWO-FISTED BACON CHEESEBURGER

Ingredients:
  • 4 pounds ground sirloin
  • 4 large eggs
  • 3/4 cup tomato juice
  • 1 tablespoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • 6 large hamburger buns
  • 6 tablespoons unsalted butter, softened
  • Seasoned salt
  • 12 to 18 ounces sliced horseradish cheddar cheese
  • 12 slices thick-cut bacon, cooked until crisp
Directions:
  1. Preheat the broiler.
  2. In a large mixing bowl, break up the ground beef, add the egg and tomato juice, and season with salt and pepper. Mix thoroughly with hands or a wooden spoon.
  3. Divide the meat into six even portions and mold each into a patty about 11/2 inches thick and 41/2 inches in diameter. With a knife, make 1/8-inch-deep crisscrosses on top of each burger.
  4. Brush the inside of each bun with butter and toast in the oven, in a toaster oven, or under the broiler, buttered sides up, until lightly browned. Remove the hot buns and season each buttered side with seasoned salt. Set aside.
  5. Broil the burgers for 7 to 8 minutes on each side or until medium rare. Lay three slices of cheese on each burger and return to the broiler for about 30 seconds or until the cheese melts.
  6. Sandwich the burgers and top each burger with two slices of bacon. Serve.

Local Don Pablo’s earns “Restaurant of the Year”

Rita Restaurant Corp., parent company of Don Pablo’s restaurants, has announced that the DonPablo'slocated at 8161 HoneyGo Blvd. in the White Marsh area of Baltimore has received the company’s coveted “Restaurant of the Year” award for 2010.

The award was presented to the entire team at White Marsh by Paul Seidman, president and CEO of Rita Restaurants. In presenting the award, Seidman said,

“Don Pablo’s success has been achieved through continued focus on quality, value, service, cleanliness and hospitality. Every member of the White Marsh team exhibited exemplary performance in each of these areas, and this restaurant leads the company overall in many performance and sales metrics.”

The White Marsh Don Pablo’s, which opened in March 1998, was also cited for its low employee turnover, low cost of goods, high guest satisfaction surveys and advancement in same-store sales.

The restaurant is managed by Mark Formwalt, managing partner; Jim Collins, area director; and managers Bob Duvall, Maria Huerta and Mike McKeon. For the Restaurant of the Year achievement, all hourly team members are being awarded a financial bonus and the restaurant received a commemorative plaque for display. Team members also are receiving specially designed uniforms, baseball caps and name tags highlighting the Restaurant of the Year honor.

Deals For Deeds has launched- a new deal site

A new deal site has launched and ia great place to find deals on local restaurants...

Deals For Deeds is a group-buying website, similar to a Groupon or LivingSocial, that also acts as a fundraising program for local non-profits.

For their launch, Deals For Deeds has teamed up with 12 Baltimore area non-profits, which will all be featured on a special voting portal. Anyone in the Greater Baltimore Region will be eligible to go online and vote for their favorite of the featured organizations; for each vote cast, Deals For Deeds will be funding a microdonation of $0.50, with absolutely no cap on potential earnings. The voting portal will also go live on the 4th, and is accessible directly at http://dealsfordeeds.com/page/baltimorevote.
“We thought long and hard about how to effectively allocate our budget to market our entrance into Baltimore, and realized that a microdonation portal accomplishes our goal of letting people know we're in Baltimore, while staying true to our mission of supporting local causes, ” said co-founder Harrison Miller. He also added “It's been such an amazing opportunity to interface with the non-profits here in Baltimore; there are so many incredible organizations doing important work through both traditional and ground-breaking methods, it really is inspiring.”
For at least the first several weeks while the voting portal is active, a minimum of 5% of every deal will be contributed to the Deals For Deeds Baltimore Community Fund, which will then be distributed to the 12 non-profit partners pro-rata based on the number of votes they receive.

Freshii a new and innovative restaurant is coming to Baltimore

Freshii a new and innovative restaurant known for its fresh ingredients and eco-friendly practices, is coming to Baltimore this spring. With more than 60 locations in the United States and around the globe, Freshii’s Downtown and Charles Village locations are the first for the Baltimore area.

Featuring nutritious, sustainably grown ingredients, Freshii customers can choose from a menu of chef-designed salads, wraps, rice bowls, yogurts and soups or opt to “custom build” their meal to create something that is uniquely theirs. With organic beef, all-natural chicken, and locally sourced produce, Freshii customers create customized meals from three categories: light, which is low in fat but high in fiber with essential vitamins, minerals, antioxidants and lean protein; balanced, which includes essential fats, slow-burning carbohydrates, good oils and high protein; and classic featuring great flavors in moderation. Freshii uses biodegradable packaging (bowls, straws, cutlery and fountain cups) made from vegetable starches such as corn or potatoes, leaving behind only carbon, biomass and water.


Freshii’s Charles Village location at 3113 St. Paul Street will open in mid-May, followed shortly thereafter by its Downtown location at 30 Light Street. Both locations will be open for breakfast, lunch and dinner and will also offer off-site catering for parties, meetings, receptions and special events.
