Avocado Baked Eggs

On the weekends (or the days I don't have to go teach) I love a good breakfast packed with protein!  During the summer I try to be super healthy and hit the gym at least 405 days a week if not 6 days (During the school year I do my best but it get hard).   I had a bag of avocados I needed to use up so I search online and did some tweaking and came up with this dish!

Avocado Baked Eggs

  • 1 Hass Avacado
  • 2 large eggs

  1. Preheat the oven to 425 degrees
  2. Slice the avocado in half, and take out the pit. Scoop out some flesh from the center of the avocado, just enough so the egg will fit 
  3. Place the avocados in a baking dish
  4. Crack an egg into each avocado half
  5. Bake for 15 to 20 minutes. Cooking time will depend on the size of your eggs and avocados.
  6. Remove from oven, then season with pepper, chives, and garnish of your liking
